Throwdown with Cairo Beselt

Ever watch that show? Not with Cairo Beselt, but with Bobby Flay? Its one of my favourite cooking shows... Another one of my favourites is 'Iron Chef'. So, today I am combining those two shows to create my own. Here's how it works... :

I'll give you an ingredient (like in Iron chef) and you have to make something including that ingredient. Well, you don't actually have to make it, you just have to write out the recipe and send it to me, but it must include 'the ingredient'.
After reading through all the recipes, I'll pick the 5 that look the best to me, and make them. After making and eating the 5 recipes, along with my co-judges, I'll decide which one deserves to win. Sounds fun, doesn't it? There might even be a reward if you win.

Now, ladies and gents. Please pay close attention. I am about to unveil the secret ingredient... (Drum role please)
Your ingredient is: CHEESE! Yup, that's right. Cheese. No particular kind of cheese either... You could use feta, cream cheese, cheddar, mozza, parmesan, any kind you like!

Now get to work! Find your favourite cheesy recipes and start sending them my way!

Contest closes in 2 weeks. That gives you until the 8th of June to send in your recipes. Contest closes at noon on the 8th.

    This is my current favorite cheese recipe - Twice Baked Potatoes. I made them recently for company and they got rave reviews! Can't take the credit for the Pioneer Woman's work, but these are some seriously good CHEESY potatoes!

  3. Here is mine...and i know it's simple but my kids beg for it: Take a slice of cheddar cheese and fry it in a no-stick skillet till it's all thin,bubbly... and crispy around the edges. You should be able to flip it off of the pan with a flipper onto a paper towel. When it cools a little, it should be crispy. I will call it "cheese pimples" just to be gross. I hope you choose my recipe!! -auntie j

If you do Aunti Jessie's recipe...and I think you should...(I have heard it referred to as fried cheeze)...haha...one of the more simple cheeze recipe's but I think Jessie's creative name makes the recipe...on the whole...more appealing...don't you?... try putting a spoonful of salsa on your "cheeze pimples"

    Now for my entry. Here is something Greek that your judges will appreciate I'm sure. (hopefully it will surpassed in popularity by the "Cheeze Pimples." It is called:

    Tyropita (Cheeze pie)

    1. Thaw out a package of puff pastry.... then put one layer on the bottom of a buttered cake pan. (luckily...there are two sheets in a package.)


    2. Mix together and layer over the puff pastry:
    •1 pound of feta cheese (crumbled
    •3 eggs
    •3/4 cups of whole milk
    •1 teaspoon of pepper
    •pinch of salt

    Put the second sheet of puff pastry on as a cover. (I like to cut it in squares and then arange them on top...that way, when you cut it into portions...the top will stay nicer)

    3. Brush the top with a beaten egg

    4. Drizzle over all with about a 1/4 c. of melted butter

    5. Bake in the oven at 350 for about 30 minutes or till just golden.

    Serve with Greek salad if at all possible!!

    make popcorn, melt butter, pour all over, shake parmesan liberally over it all, toss and eat... yummmmm....

  6. cauliflower casserole
    over 4c. partly cooked cauliflower, pour:
    1/4c. butter
    3T flour
    1 1/2 c. milk
    1c. grated CHEESE
    1t salt
    1/2t pepper
    sprinkle with 1/2 c. buttered breadcrumbs and slivered almonds. Bake at 375 for 30 mins.

  7. Hi Cairo, I'm one of your mom's friends. I think this throwdown (one of my favorite shows, too) sounds fun! Here's my entry:
    Cheesy Hashbrowns
    butter
    1 small sweet onion
    bacon
    hashbrowns or potatoes o'brien (2 bags)
    8 oz sour cream
    2 cups medium or mild cheddar, shredded
    1 can cream of chicken soup
    cornflakes

    Preheat oven to 350 degrees farenheit
    Saute chopped onions in butter
    Add crumbled bacon, sour cream, soup, 1 cup cheese & stir until cheese is melted
    Pour over thawed hashbrowns and mix
    Pour into a 13x9 inch baking dish and bake until hot and bubbly
    Place the remaining cheese on top and bake until melted
    Then add crushed cornflakes and bake until golden brown.

    I hope you enjoy it! It is my favorite side dish.

  8. This is the best meatloaf ever!

    ONE LOAF TO LOVE
    1 c. finely diced mushrooms
    1/2 c. finely diced red bell peppers, zucchini, and onions
    1 tsp. minced garlic
    1/4 tsp. dried basil
    1 1/2 lbs. extra lean ground beef
    1 c. fresh whole wheat bread crumbs
    1/4 c. barbeque sauce (or ketchup)
    1 pkg. hamburger seasoning mix
    1 egg
    1/4 cup chopped fresh parsely (can leave out)
    1/4 tsp. pepper
    1/2 C. cheese (mozzarella, cheddar or mont. jack)

    Preheat oven to 375
    Spray skillet with cooking spray...add mushrooms, red pepper, zucchini, onions and garlic. Cook and stir over med. heat until veggies are tender. Add basil and cook for 1 min. more. Remove from heat...set aside.
    In large bowl combine beef, bread crumbs, bbq sauce, ham. seasoning mix, egg, parsely and pepper. Mix well with hands.
    On a sheet of wax paper form meat into 10x12 rectangle. Spread veggie filling over meat leaving 1/2 inch border. Sprinkle with cheese. Roll up meatloaf (like you do cin. rolls) lifting wax paper to help get started. Roll tightly as possible.
    Transfer to glass cass. pan that has been sprayed with cooking spray. Bake for 40 min.
    Remove from oven and spread with bbq sauce (or ketchup) bake for another 10 min.
    Enjoy! You might have to double for your family.

  9. Hi Cairo....I am another one of your mama's friends. You have no idea how much you are helping mamas all around by giving us yummy new dinner ideas. Thank you! I love Throwdown with Bobby Flay.....so I couldn't resist your contest.

    I am gonna break from the pack here and do a sweet cheesy recipe! Dessert, if you will. It's yummy!

    Peanut Butter "Cheese Ball"

    1 package (8 ounces) cream CHEESE, at room temperature
    1 cup powdered sugar
    3/4 cup creamy or chunky peanut butter (not all-natural).
    3 tablespoons packed dark brown sugar
    1.5 cups (9 oz) semi-sweet chocolate chips
    Graham cracker sticks and/or apple slices

    BEAT cream cheese, powdered sugar, peanut butter and brown sugar in large mixer bowl until blended. Spoon onto a large piece of plastic wrap; bring up all four corners and twist tightly (should form a ball shape).

    FREEZE for 1 hour 30 minutes or until firm enough to keep its shape. Place chocolate chips in flat dish. Remove plastic wrap from ball and roll ball into chocolate chips to completely cover (you may find it necessary to press chocolate chips into ball).

    PLACE ball on serving dish; cover and freeze for 2 hours or until almost firm. (Can be made ahead. If frozen overnight, thaw at room temperature for 20 to 30 minutes before serving.) Serve with graham cracker sticks and apple slices for dipping or spreading.

  10. Hello Cairo! I'm another one of your mom's friends. Love the idea of your contest and I love all the recipes!

    I love fondue and it's great for a group of people. ;-) Not sure if you have a fondue pot or not but you can use a regular saucepan on the stove if you don't. These instructions are for on the stove. If you have a fondue pot, just transfer to it after heating on the stove.

    Non-Alcoholic Cheese Fondue

    1 cup Apple Cider (to mix with cheese)
    1/4 cup Apple Cider (to mix with cornstarch & mustard)
    2 tsp Lemon Juice
    1 tbs Onion (finely chopped)
    3 cups Cheddar Cheese (shredded)
    1 tbs Cornstarch
    2/3 tsp Mustard Powder
    White Pepper (optional)

    Heat the 1 cup cider, lemon juice, and onions on medium heat.
    Slowly add the cheese while stirring pretty much constantly.
    Mix the cornstarch & mustard in 1/4 cup apple cider.
    Add the mixture to the cheese in the pot.
    Add the white pepper. (if you want)

    If it seems too sweet you can add more lemon juice until it tastes right. Also, use a figure 8 motion when stirring to help mix all the ingredients.

    Get a yummy italian bread and cut it into small bite size pieces. (Day old bread works best, not too fresh.) You can also dip any vegetable that you would like (broccoli, cauliflower, bell peppers, carrots). Steam them before but don't overcook, you want them still a bit firm.

    You can use some barbeque skewers (if you don't have the fondue ones). Have fun!!!

    I'm your Dad's cousin, Karen and this recipe is from his other cousin, Kathy.

    Pasta Sauce

    1/2 cup butter melted
    1 cup whipping cream
    1/2 cup parmesan cheese (don't have your butter and whipping cream too hot when you add the cheese or it will get all stringy)
    1/2 tsp salt (garlic salt or real garlic makes it even better)
    1/4 tsp pepper

    I pour it on bowtie pasta.

  12. heres my recipe ( my fave food is cheese!)this is kayla!

    take a cookie pan and lay a thin layer of chips on it then lay cheese all over it and then another layer of tortilla chips on top then place mushrooms on top of the chips then more cheese then some salsa and more chips and more cheese then put it in the oven till all the cheese is melted!
    this my recipe and I call it lots of stuff nachos!

  13. Here's mine!

    PIZZA with Roasted Garlic, Bell Peppers, and 2 Cheeses

    1 large head garlic, unpeeled
    2 tbsp olive oil
    1 large red onion, cut into 1/2 inch rings

    1/3 cup oil-packed sun-dried tomatoes, drained, oil reserved

    1 prepared pizza crust (thin crust) - *I make my own, but do whatever
    2 cups grated mozzarella
    1/2 cup roasted red bell peppers from jar, cut into 1/2 inch thick strips (or you could make your own)
    2/3 cup crumbled feta cheese
    4 tbsp chopped fresh basil or 1 tbsp dried
    2 tbsp chopped fresh parsley

    Preheat oven to 375F. Slice top off garlic head; place in small dish. Drizzle with 1 tbsp olive oil. Brush baking sheet with 1/2 tbsp olive oil. Place onion slices on sheet and brush onion with 1/2 tbsp olive oil. Bake garlic and onion until garlic cloves are light brown and soft and onion is tender, about 45 minutes. Remove from oven; let cool.

    Using fingers, squeeze out roasted garlic cloves into food processor; add sun-dried tomatoes. Using on/off turns, process until almost smooth, adding enough reserved oil from sun-dried tomatoes to form paste. (Onions and garlic mixture can be prepared 1 day ahead. Cover separately and refrigerate.)

    Preheat oven to 450F. Place crust on baking sheet or pizza pan. Spread garlic paste over crust. Top with mozzarella cheese, onion, pepper strips, and feta cheese. Sprinkle with 2 tbsp basil and 1 tbsp parsley.

    Bake pizza until crust is golden brown and cheese bubbles, about 8 minutes. Transfer to cutting board. Cool 5 minutes. Sprinkle with remaining 2 tbsp basil and 1 tbsp parsley. Cut into wedges and serve!
    Serves 4

  14. here's one of our favourites . . .

    WARM BACON CHEESE SPREAD

    8 oz. cream cheese
    1 1/2 c. sour cream
    2 c. grated cheddar cheese
    1 1/2 tsp. Worchestershire sauce
    3/4 lb. bacon, cooked & crumbled
    1/2 c. chopped green onions

    Beat cream cheese until smooth. Add sour cream, grated cheese & Worchestershire sauce. Stir in bacon & green onions. Bake at 325 F for 1 hour, or until heated through.

    we just serve this as a dip with crackers or tortilla chips, but you can also bake it in a round bread loaf.

    he makes this all summer long with roma tomatos and the fresh mozzarella that comes in balls - he adds a little balsamic vinegar to it, too...
